The best thing about growing fresh vegetables is harvesting and eating! However it can be discouraging if you have to wait several months to harvest so I make a list to try. The 5 vegetables that grow fast and easy indoors.

5 vegetables that you can grow fast and easy indoors
As little as 21 dats to harvest
Plant in light soil with high organic matter only about a half-inch deep
Radishes like full sun or a good grow light
They don’t need much room to grow, but they don’t like to crowd each other
Keep a good eye on them. Don’t let them bolt
Harvest when you can see the radish about an inch wide at the surface
Leaf lettuce 45 days to harvest
Leaf lettuce is the most versatile and quickest of the lettuces.
I am including all leaf lettuce as a group. This includes things like red oaks, butter heads, Simpson, arugula, etc. Really anything that does not form a tight head.
The best part about this type of lettuce is that you can harvest what you want at the time you need it. Just pick some or all of the leaves after they get about 3″ tall. The plants will continue to grow new leaves two or more times.
Careful not to let it bolt. Cut the leaves when they get 4″ or more and store in the refrigerator for a day or two.
Plant in a good organic mixture.
Lettuce likes cooler temps, so it does well out of the direct sun.

Bush beans are great to grow in containers.
They need around 2′ of space since they really are small bushes.
Beans prefer less organic material and little nitrogen fertilizers since they produce what they need.
Theses veggies do best with at least 6 hours of full sun or full spectrum grow light
The best part of growing bush beans is that once they start producing you can start harvesting. The more you harvest the more they will produce!

Spinach is much like leaf lettuce.
It can be harvested as you need it. The spinach will continue to regrow several times.
Make sure you harvest everything at the first sign of bolting. Spinach will keep in the refrigerator for a few days
Spinach grows best in organic-rich soil.
They do not like heat making it perfect for cooler spots in the house.
Spinach does not need direct light but does best with at least 6 hours of muted light
Harvest in about 25 days
Green onions are one of my favorite things to drop into almost any recipe. They add a light bit of onion flavor without overwhelming the other ingredients
My other favorite thing about green onions is that you can plant once and harvest over and over.
Start them with seeds or sets.
The best way to grow is to start with supermarket green onions! Root them in water then plant.
They like moist but well-drained soil.

Or you can take scissors and cut off some of the tops. Wait until they get about 6″ before you start taking cuttings.
The older the plants the strong the onion flavor becomes.
